About the dish
Since being diagnosed with PCOS it has been so challenging trying to curb my sweet cravings for a healthy but delicious dessert. The benefits of chia seeds paired with dark chocolate and berries really make this pudding really nourishing, satisfying and good for you.
Ingredients
100ml plant-based milk
¼ cup chia seed pudding
¼ cup or 60g melting dark chocolate (70% dark chocolate)
1 tablespoon honey (optional)
Some berries for topping
Method
Step 1: Melt the chocolate
Heat up the milk in a pan and add the chocolate heat for 1 to 2 minutes.
Once the chocolate starts melting, turn off the fire and mix until combined.
Step 2: Mixing the pudding
In the same pot add in honey and chia seeds and mix until combined.
Scoop the pudding mixture into serving cups and place in the fridge to set for at least 1 hour.
Step 3: Serve
Best served chilled with some berries.
Chef’s Tips
It's so important to not burn your milk when heating it up. Just make sure the heat is low and once
you can start seeing some vapour turn the heat off
Substitutes:
You can substitute the dark chocolate with 2 tablespoons cocoa powder but do add some honey for sweetness.
