About the dish
Nasi Ulam is one of my favourite dishes to eat but being insulin resistant means I have to cut down on carbohydrates as much as possible and found the perfect substitute for this amazing dish.
Ingredients
For Serunding Udang
Blended Ingredients 1 Red onion
2 Garlic
1-inch ginger
5 Dried Chili cut up, get rid of seeds and soaked in hot water, add water
¼ cup Udang kering
1 /2 a cup of grated coconut toasted
2 tbs coconut oil
1 teaspoon curry powder
Other Ingredient
2 Tbs Coconut Oil
1 head cauliflower grated
¼ cabbage sliced and diced
2 turmeric leaves thinly sliced
1 torch ginger sliced
1 cucumber deseeded diced
7 four angle beans/long beans sliced
Handful mint
Handful coriander
Handful fresh ulam raja
Handful ulam pegaga
Method
Step 1 : Make your serunding udang
In your blender blend onion, garlic, ginger, dried prawns and chilli until a smooth pulp
In a pot add in coconut oil and add the blended items and cook down until the blended items are really dry about 6 to 8 minutes before adding grated toasted coconut and continue to cook until the mixture is super dry and all combined. This process takes about 10 - 15 minutes
Step 2: To make the cauliflower rice
In a pan add in coconut oil and add in grated cauliflower and stir fry and cook for about 1 - 2 minutes on high heat and not any longer
Once it starts steaming, remove the cauliflower and place it in a strainer to strain any excess moisture
Step 3: To serve
In a large bowl, add in cauliflower rice along with all the chopped, sliced and diced vegetables and season and mix until combined
Serve the Cauliflower nasi ulam with the serunding udang
Chef’s Tips
Substitute coconut oil in your cooking as it provides you nutrition and also eases you to go to the toilet to do number 2 . Good fats are so important for women who struggle with PCOS and combining good fat like coconut oil into your diet helps keep your gut happy and healthy.
Substitutes:
You can opt to do a vegan version of this recipe and omit the dried prawns for the serunding udang but add in some salt to taste.
